Read on for a guilt-free recipe that will satisfy your sweet tooth while keeping your wellness goals intact.

Ingredients:
  • 1 cup old-fashioned oats
  • 3/4 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil, melted
  • 1/4 cup pure maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts
Directions:

Preheat the Oven:

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients:

In a large bowl, combine the old-fashioned oats, whole wheat flour, baking soda, cinnamon, and salt. Stir until well mixed.

Prepare Wet Ingredients:

In a separate bowl, whisk together the melted coconut oil, maple syrup, egg, and vanilla extract until smooth and well combined.

Combine Wet and Dry Mixtures:

Add the wet ingredients to the dry ingredients and mix until a cookie dough forms. Be careful not to overmix.

Fold in Cranberries and Walnuts:

Gently fold in the dried cranberries and chopped walnuts into the cookie dough, distributing them evenly for a burst of flavor and texture in every bite.

Shape Cookies:

Using a cookie scoop or a spoon, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake to Perfection:

Bake in the preheated oven for 10-12 minutes or until the edges are golden brown. Keep a close eye to avoid overbaking, as these cookies are best when they're soft and chewy.

Cool and Enjoy:

Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Once cooled, share these delightful treats with loved ones or keep them on hand for a wholesome holiday snack.
